Ingredients:
- Any kind of sweet potato, washed thoroughly, peeled or unpeeled (we used Japanese purple sweet pototoes)
- Coconut milk without gums

Method:
Slice the sweet potato. Add a thin layer of water to a pan, turn on the heat. Add the sliced sweet potato in layers. Sprinkle about 1/2 to 1 teaspoon of our Coffee and Dessert Spice based on how large or how many sweet potatoes you use. Cook on medium heat, covered, until softened. Add as much coconut milk as you would like. Allow to heat through. Turn off heat. Drizzle a bit of the maple syrup only of you need to. Top with crushed nuts and pumpkin seeds.
